BAKING THE
BAKERY

How to help a Dutch bakery with a few locations evolve to a brand ready to roll out nationally?

Where to start? What does it mean to be a artisanal baker in 2021?

How to cater to the behaviour and needs of people in the city?

By mapping out the entire trajectory of the client within a chart and uncovering all needs, opportunities and loopholes at any time, we figured out the ideal client journey for for different kinds of shopformats in varying locations.

Our entire layout, including, an ideal shopping experience from an operational and a customer experience point of view.

Le Perron is an artisanal bakery in heart and soul. Their working methods guarantee an optimal quality and freshness of the final product. This had to be translated and felt in the overall shop experience

By examining the production process we found out that there were many dough leftovers reduced to waste. This triggered us. Why not bake our interior out of left over dough?

The waste dough was used to create tiles and lighting fixtures. Examining the production proces brought us more inspiration; dough moulds became light fixtures, rolling pins became menu boards, cake molds became food trays and we saw wall finishing in baking trays.
Even the signage on the wall was baked in dough as well.

The final touches to the product, which means filling, baking and cooling take place in every individual Le Perron bakery. We decided not to hide this in the back kitchen like before. It is this proces that gives confidence in the freshness of the product and brings the shop to life, making it it's own theater.
